Use-By vs Best-Before vs Sell-By: What Food Dates Actually Mean

Food date labels are widely misunderstood - and it leads to mountains of good food in the bin. Here's what each label really means.

A staggering amount of perfectly good food gets thrown out for one silly reason: people treat every date on the packaging as a hard deadline. It isn't. The labels mean different things, and only one of them is about safety.

Use-by = safety

A use-by date is the important one. You'll find it on perishable, higher-risk foods like meat, fish, dairy and ready meals. After this date, the food may not be safe to eat even if it looks and smells fine — so don't push past it.

The one habit that helps: store these foods properly and eat or freeze them in time. Freezing on the day of purchase effectively pauses the clock.

Best-before = quality

A best-before date (sometimes "best if used by") is about quality, not safety. After it, the food is usually still perfectly fine to eat — it just might have lost a little crunch, colour or flavour. Dried pasta, canned goods, crackers and many condiments can be good for a long time afterward.

The rule here is simple: trust your senses. If it looks, smells and tastes right, it almost certainly is.

Sell-by = for the shop

A sell-by date is really a note to the store about how long to display an item. As a shopper, you can usually count on several more days at home after a sell-by date, assuming you've stored it well.
